Guanciale (Italian pronunciation: [ɡwanˈtʃaːle]) is an Italian cured meat product prepared from pork jowl or cheeks. Its name is derived from guancia, Italian for cheek or pillow.^[1] Guanciale is similar to the jowl bacon of the United States.
