Origin of the name:
The inclusive zone between Arno and Tevere was the territory of Etruschis or Tuschi in the epoch  before the Romans . The name of the Region in that times was Etruria or Tuscia. Subsequently from Tuscia was formed the name in Tuscany.

PECORINO TOSCANO CHEESE D.O.P. 2LB

 

Rustic, sometimes oily or dry depending on the age. Slightly flaky and dry with a rich grassy and walnutty flavor. We prefer these artisanal (handmade) Pecorinos at a middle to extra age. The absolute finest Pecorino's, we feel, are found throughout the regions of Tuscany, like Siena and Pienza. They come in many different styles and sizes. The younger Tuscan Pecorinos are typically milder and softer with a pleasant grassy sheepy taste and an off-yellow rind. The more mature Pecorino Toscano are traditionally wrapped in walnut leaves and rubbed with tomato paste. The result is a dark reddish-brown rind, a bone-colored paste and a big beefy, walnutty flavor that is not too sheepy. Absolutely Tuscany's best! Best served as a cocktail cheese with large ripe tomatoes, marinated olives and dry sausage or soppressatta.
